Chicken Fricassee with Dumplings | from Bisquick

CHICKEN FRICASSEE
INGREDIENTS
2 1/2 to 3 pounds whole chicken, cut up
1 cup Bisquick baking mix
2 teaspoons salt
1 teaspoon paprika
1/8 teaspoon pepper
2 tablespoons shortening
1 tablespoons butter
1 can condensed cream of chicken soup
1 1/2 cups milk
DIRECTIONS
  • Wash chicken pieces and pat dry
  • Mix baking mix, salt, paprika and pepper in paper bag
  • Shake 2 or 3 pieces of chicken at a time in bag to coat thoroughly
  • Melt shortening and butter in large skillet set to medium high on stovetop; brown chicken on all sides
  • Remove chicken onto wire rack placed on jelly roll pan to catch the grease
  • Pour excess grease into ceramic or metal bowl and let harden to empty into trash later
  • Loosen crusty fried pieces on the bottom of pan and combine with cream of chicken soup and milk in skillet on medium heat. Double if making a large batch
  • Add the chicken back into the skillet, cover, and simmer for 1 hour
  • 20 minutes before end of cooking time, add dumpling dough by spoonfuls and follow dumpling directions below

DUMPLING DOUGH (made with Bisquick)

INGREDIENTS
2 cups Bisquick
2/3 cups milk
1/2 teaspoon parsley flakes
1/4 teaspoon poultry seasoning
DIRECTIONS
  • Mix 2 cups Bisquick and ⅔ cup milk until soft dough forms
  • Drop dough by spoonfuls all over the top
  • Cook uncovered over low heat 10 minutes
  • Cover and cook 10 minutes longer
  • Depending on where you live, you may need to add more liquid
  • Tip - Try not to over mix and let them set for a few minutes, so they rise. If adding to stew steer clear from dropping directly into liquid.

HOMEMADE BISQUICK

INGREDIENTS
6 cups all-purpose flour
3 tablespoons baking powder
1 tablespoon salt
1 cup vegetable shortening, cubed
DIRECTIONS
  • Add the flour, baking powder and salt to the bowl of a food processor
  • Pulse ingredients for about 15 seconds
  • Add in the vegetable shortening and pulse the processor until the mixture resembles cornmeal
  • Place homemade Bisquick into an airtight container and store within the refrigerator for up to 3 months
