Zucchini Bread

INGREDIENTS

3 eggs, beaten light and foamy 

1/2 cup oil 

1/2 cup applesauce 

2 cups sugar 

2 cups zucchini (unpeeled) 

3 teaspoons vanilla 

Stir together and add

3 teaspoons cinnamon 

1 teaspoon soda 

1 teaspoon salt 

1 1/2 cups self rising flour 

1 cup white flour 

1/2 cup whole wheat flour 

1/2 teaspoons baking powder 

1/2 cup chopped nuts (optional) 


DIRECTIONS 

Bake in 2 lightly greased and floured loaf pans for 45 minutes - 1 hour at 325 degrees Fahrenheit. 


*We like to sprinkle a mixture of cinnamon and sugar lightly over top before baking.

Alecia, love the site!! Do you have any recipes that use zero sugar (applesauce as a sweetener) and only whole wheat flour? I was chatting with my sister about this over the weekend ... we'd love to find some all natural (zero sugar) baking recipes.
