Ingredients
1 c. coconut flour
1 c. coconut palm sugar
2 tbsp. shredded coconut
1/2 c. butter
3/4 tsp. vanilla extract
1/2 tsp. nutmeg
1/4 tsp. celtic sea salt
4 eggs
Directions
Preheat Oven to 350º F.
Mix together butter, sugar, salt, eggs, and vanilla.
Stir in flour, shredded coconut and nutmeg. Let batter rest for 5 minutes.
Spread batter by the spoonful 1 inch apart on a greased (butter) cookie sheet. Bake at 375º F for 15 minutes.
Cool slightly and remove from cookie sheet.
Servings: Makes about 2 dozen cookies.
