Esther is married to Brian Barlow, Russ's cousin. Her mother is a Bartel and I swear someday I'm going to discover that Esther and I are cousins!!! She always serves something wonderful whenever we dine in their home and these are too good not to have readily accessible. I must admit that the first time I made them they didn't turn out as perfectly as Esther's, but they were still melt in my mouth delicious!
COCOA MIXTURE
1 c. butter or margarine
1/3 c. cocoa
1 c. water
1/2 c. semi-sweet chocolate chips
DIRECTIONS
In a sauce pan or bowl for microwave, combine butter, cocoa, water.
Bring to a boil; stirring often.
Remove from heat and add chocolate chips, stir until melted. Set aside.
IN LARGE BOWL SIFT TOGETHER
2 cups flour
2 cups flour
2 cups sugar
1 teaspoon soda
1/2 teaspoon salt
STIR IN
2 slightly beaten eggs
1/2 cup buttermilk
1 1/2 teaspoon vanilla
DIRECTIONS
Add Cocoa Mixture to Large Bowl and mix until blended.
Pour into nonstick or greased 15 1/2 X 10 1/2 X 1 inch baking pan. Bake at 375 degrees Fahrenheit for 20 minutes. Immediately pour frosting over brownies; spread evenly.
FROSTING
1/4 cup butter
3 tablespoons dry cocoa
3 tablespoons buttermilk
5 tablespoons semi sweet chocolate chips
Cook and stir until boiling. Remove from heat and add:

1 cup mini marshmallows
Stir until almost all melted.
Beat in
2 1/4 c. powdered sugar and optional 1/2 c. chopped walnuts.
Add 1 1/2 tsp. vanilla.
May need to add up to 1/4 c. milk until desired consistency is reached.
Pour over brownies while hot.
Yields 60 Bars
