Whole Chicken | Crockpot

Lightly coat crockpot with avocado oil. Layer on the bottom 1 cup chopped sweet onion. If you like to incorporate veggies, add a layer of peeled carrots, cut in half.

Combine the following dry ingredients in a small bowl and whisk:
4 teaspoon salt
2 teaspoon paprika
1 teaspoon cayenne
1 teaspoon onion powder
1 teaspoon thyme
1/2 teaspoon garlic powder
1/2 teaspoon pepper
  • Pull the giblets from the cavity of the chicken (I like to boil them for our animals). Rinse the chicken and pat dry thoroughly. Rub the dry ingredients all over the chicken and add any that is left to the cavity of the bird. If you like, you could add some halved celery to the cavity as well. 
  • Set temperature on low and cook 4-5 hours, or until bird reaches 185 degrees by meat thermometer. 
Great with a side of mashed potatoes and gravy made from the cooking juices. We added a side of broccoli and some homemade rolls to fill out the meal.
