Potato Soup

4 potatoes mashed or cubed or baked with insides scooped out

2/3 c. butter

2/3 c. flour

6 c. milk

1 c. chopped green onion

3/4 tsp. salt

1/2 tsp. ground pepper

12 slices bacon or chopped ham

5 ounces shredded cheddar cheese

1 (8 ounce) sour cream

2 large tbsp. chicken base (that's the secret, but I guess not anymore)

DIRECTIONS Melt butter over low heat, stir in flour. Cook 1 minute. Pour in milk on medium heat, keep stirring 'til thick. Add potatoes, green onion, salt, pepper, ham, cheese. Stir. Heat 15 minutes. Mix in sour cream and serve.

*Goes great with Breadsticks, yum!
