Rio Grande Dip



Devoured in a blink of an eye, so don't serve it until you're ready to dig in too or there may not be any left for you. This statement is made based on personal experience ; -)

2 (15 ounce) cans black beans, rinsed and drained

1 c. salsa

1 (4 ounce) can diced green chili peppers, drained

1 medium tomato, finely chopped

1/2 c. sliced green onion

1 c. shredded Monterey Jack cheese (add cheddar for more color)

DIRECTIONS Mix and serve with Tortilla Chips, hamburgers, bbq ribs, alongside chicken or steak, atop a baked potato.

*You can make ahead and add cheese just before serving.
