Chicken Noodle Soup + Mashed Potatoes


When I was a little girl my mother would make chicken noodle soup over mashed potatoes when we were sick. Even now, when I feel a cold coming on, this is what I want. It's warm, soothing, and filling.

Homemade chicken noodle soup tastes best, but if your short on time you can substitute Lipton Noodle Soup or Campbell's. If you want to add veggies, toss in some frozen peas and carrots during the boiling stage while you whip up some mashed potatoes.

Boil 6-7 peeled and sliced potatoes 'til tender. Drain. Place potatoes in mixing bowl and mash with a fork. Put the paddle on your mixer and add salt, pepper, butter, and milk (chicken broth or potato water may be substituted).

Beat with the paddle then change to whisk and whip, on high, for 1 minute. Ummm...place a generous helping of mashed potatoes in your bowl and ladel the chicken noodle soup over the top. Salt and pepper to taste. Relax, heal, enjoy.
