Waffles & Bacon

I like making homemade waffles for breakfast sometimes. The Belgiam waffles are the best. I make them from scratch from a recipe out of the "Fannie Farmer Cookbook". There are a couple of recipies I really use in here and the book is starting to fall apart so best to get the recipe online as not to forget it.
Waffles

2 eggs, well beaten

1 c. milk (sometimes I will substitute a powder milk mix)

3 tbsp. salad oil

1 1/2 c. flour

3 tsp. baking powder

2 tsp. sugar

1/2 tsp. salt

DIRECTIONS Mix the eggs, milk, and oil in a large bowl or pitcher. Stir in the flour, baking powder, sugar, and sald and mix until blended.

Heat the waffle iron, spray with non-stick spray, pour in enough batter as not to go clear out to the edge of the iron or it will grow and overspill edges. Close lid and bake until your iron signals or until the steaming stops and the waffles are crisp, tender, and brown.

(Recipe makes almost 4 large belgiam waffles)

Bacon
We like to cook bacon in the oven instead of on a skillet or griddle. Very simple.

Pre-heat oven to 400 degrees.

Line cookie sheet with tinfoil and lay out 1 package of bacon.

Put in oven and cook to desired crispness. We like crispy bacon, so I turn each slice of bacon over once during the cooking process.
