Pancakes

Another one of my favorite recipies from the "Fannie Farmer Cookbook". Jaxsen had a friend spend the night, this is what I made for them this morning.

HINT The amount of milk you use will determine how thick these pancakes are. Start with the smaller amount suggested and add more if the batter seems too thick. Try to have the milk at room temperature before mixing and take care not to overbeat.

1/2-3/4 c. milk
(I sometimes use powder milk mix as a substitute.
3 tbsp. powder milk mix for every 1/2 c. of water)

2 tbsp. melted butter

1 egg

1 c. flour

2 tsp. baking powder

2 tbsp. sugar

1/2 tsp. salt

DIRECTIONS Beat the milk, butter, and egg lightly in a mixing bowl. Mix in the flour, baking powder, sugar, and salt. Lightly grease the griddle. Heat the griddle to a moderate heat until a few drips of cold water sprinkled on the griddle form rapid moving globules.


Pour about 1/4 cup of batter on the griddle. Add chocolate chips for those who like them. Bake on the griddle until the cakes are full of bubbles on the top and the undersides are lightly browned. Turn with spatula and brown the other sides. Place on plate and place a large lid over them to keep them warm until served. Serve with syrup.
